Karyn's German Apple Cake

2eggs, 1cup canola oil, 2cups white sugar, 2 cups all purpose flour, 2tsps. cinnamon, 1tsp. baking soda, 1/2 tsp. salt, 1tsp. vanilla, 4 cups sliced apples, with peel, 1/2 cup chopped walnuts.
mix eggs and oil together until well blended. Sift dry ingredients together and add to egg mixture gradually. Mix well. Add vanilla. Stir in sliced apples and chopped walnuts. Spread batter in lightly greased 9x 13 cake pan. Bake at 350f-45-60 minutes. Test for doneness. Cool cake completely. Frost with cream cheese frosting.


Caramel Fruit Dip:
4 oz. tub of creamy caramel
3 oz. cream cheese
8 oz. cool whip
1 tsp vanilla
Microwave caramel until melted.  Add cream cheese, cool whip, and vanilla.  Stir until mixed.  Great for dipping fruit, especially apples!
